WEDDING CAKES

Wedding cakes at Truffes are a most special event. From your first call to the delivery of your special cake we strive to make this a fun experience. We know how important this day and this cake are and we want you to know that from the inside to the outside of your cake, every detail is important.

You will find a number of cakes listed here. The basic cakes are less complicated than the specialty cakes but all are made to order just for you. Each consists of tender, moist layers of cake full of flavor accented with fillings to complement them. There are no box mixes or bucket icings here. Your cake starts with the dry ingredients being weighed and the eggs broken. The fillings are prepared and the cakes assembled, then finished with an unbelievably light and airy French Buttercream so full of flavor it's a treat by itself.

Basic Cakes

Three cakes and two fillings are available as desired. All of the cakes are extremely moist and finished with our French Buttercream.

Basic Fillings

Use either of these to fill the above cakes:

Basic French Buttercream

This is the last word in buttercream. Not cloyingly sweet, this buttercream is made on a meringue base mounted with butter. The basic flavor can be changed although there may be an additional charge.

Chocolate Ganache

Ganache is nothing more than cream and chocolate. Depending upon the proportions used, it can be heavy and dark or light and airy.

Speciality Cake Fillings

These cakes have more going on inside than the basic cakes. While they are primarily used for wedding cakes, they work equally well for any occasion where a very special cake is called for. Just call to discuss the possibilities with us.

PAVE D'AMOUR or Cake of Love

The most sophisticated of wedding cakes, this combines layers of buttercake washed with orange liqueur syrup and layered with chocolate ganache, coffee buttercream and chocolate souffle layers.

RASPBERRY WALTZ

Delicate yellow buttercake layers are layered with raspberry buttercream and marzipan. The marzipan may be omitted if desired and the middle layer can be filled with chocolate ganache.

LEMON MIST

Our moist, tender white chiffon layers are filled with our tart sweet lemon curd.

PRINCESS CAKE

This cake is truly fit for a princess. Our white chiffon is filled with a raspberry filling and finished with fondant. This cake may also be used without the fondant.

HAZELNUT DREAM

Yellow buttercake is filled with an intense hazelnut buttercream and chocolate ganache.

RASPBERRIES AND CREAM

Either white chiffon or chocolate layers are filled with whipped cream which is covered completely with fresh raspberries. The middle layer is filled with chocolate ganache. The price of this cake is subject to market value of fresh raspberries.

CARROT CAKE

An extremely moist cake with raisins and walnuts and filled with the traditional cream cheese frosting. For a wedding cake, we use our basic buttercream to finish the cake as the cream cheese icing is too heavy.

CHOCOLATE RASPBERRY TRUFFLE CAKE

Our very chocolatey cake filled with raspberry filling and chocolate ganache. Definitely for chocoholics.

CHOCOLATE HAZELNUT DREAM

So many people asked for the chocolate cake with hazelnut filling, we decided to put it in for everyone. Very unusual.

Cake Finishes

FRENCH BUTTERCREAM

All of our cakes are finished with our French buttercream which is very light to taste but with intense flavor. There are a number of finishes such as basketweave, lattice, strips and dots, brocade or soutach and bows and swags available as well as many others.

FONDANT

This is a rolled finish placed over the buttercream that is as smooth as porcelain. This type of finish has an infinite number of designs many of which can only be done on fondant.
